Baked Oatmeal Cups

  • 2 eggs
  • 1/4 cup avocado oil
  • 3 tbsp maple syrup
  • 1/2 cup unsweetened apple sauce
  • 1 1/2 cups milk
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 3 cups Old Fashioned oats
  • 2 tsp baking powder

  • Preheat oven to 350 degrees. Grease a muffin tin or line with paper muffin cups.
  • In a large bowl, whisk together eggs, avocado oil, and maple syrup until combined. Add the applesauce, milk, vanilla extract, salt and cinnamon.
  • Stir in the oats and baking powder and mix until combined.
  • Spoon the oat mixture into the muffin tin, filling each muffin cup with about 1/4 cup of the mixture.
  • Add desired toppings. I usually press the toppings down into the oat mixture slightly so they do not fall off after baking.
  • Bake for 30 minutes. Remove from the oven and allow to cool in the pan for 5-10 minutes then transfer to a wire rack to finish cooling.
  • Store in an airtight container in the refrigerator. You can also freeze them and thaw in the refrigerator overnight and reheat in the morning.
