Roasted Rainbow Carrots


  • 2 lbs or about 12 carrots preferably rainbow
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/8 tsp cayenne pepper
  • Pinch of salt and black pepper
  • 3 tbsp pepitas


  • Preheat oven to 400 degrees. Peel the carrots. Then cut the tops off of the carrots, slice them in half lengthwise and then again crosswise.
  • Place carrots in a large bowl. Toss with olive oil, cumin, turmeric, cayenne pepper, salt and black pepper.
  • Spread evenly on a baking sheet lined with parchment paper.
  • Roast for 30 minutes, or until tender.
  • Serve topped with pepitas.
