
Nana’s Irish Soda Bread
Ingredients
- 9 cups flour
- 3 tbsp baking powder
- 3 tbsp baking soda
- 2 cups sugar
- 6 eggs
- 5 1/4 cups buttermilk
- 6 tbsp butter melted
- 3 cups raisins
Instructions
- In a large mixing bowl, combine flour, baking powder, baking soda, and sugar and set aside.
- In a separate large bowl, whisk eggs. Add buttermilk and mix until combined.
- Melt the butter and set aside to cool.
- Create a hole in the center of the dry ingredients. Pour in egg-buttermilk mixture and stir until combined.
- Add the butter when mixing starts to get difficult. Do not over mix.
- Fold in raisins.
- Distribute evenly between 3 greased and floured loaf pans.
- Bake at 350 degrees for about an hour or until golden brown and until a butter knife inserted into the center of the loaf comes out clean.
- Cool on wire rack.
