Pumpkin Spice Energy Bites


  • 1 1/2 cups old-fashioned oats
  • 1/2 cup natural peanut butter
  • 1/2 cup pumpkin puree
  • 1 tbsp chia seeds
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/3 cup dried cranberries


  • In a large bowl, mix together all ingredients until thoroughly combined.
  • Using your hands, roll about 1 tbsp of the mixture into a ball and repeat until the mixture is used up (will make ~20-25 bites). If the mixture is too dry add more pumpkin. If it is too wet, add more oats.
  • Refrigerate in an airtight container. These also freeze well!
